Cut the cod into large, bite-size pieces, then sprinkle on salt and pepper, and lightly coat with starch.

Remove the shiitake mushroom stems and cut into diagonal slices.

Cut the long onion into 1 cm (1/2 in.) slices, and the bamboo shoot into wedges.

Cut the carrot into rectangular slices then quickly boil in boiling water. Also quickly boil the snow peas in boiling water.

Heat oil in a wok, then add the garlic and cod and, when the fish is cooked through, add the vegetables, except the snow peas, and season with (A). Add the snow peas, mix together, and serve.
Cooking Basics

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.



Cut into 4 - 5 cm (1.6 to 2 in.) long pieces, peel, then cut lengthwise into 1 cm (0.4 in.) thick planks. Lastly, cut each slice lengthwise into 2 mm (about 0.1 in.) thick rectangular sticks.

Fold the stem over towards the straighter side of the snow pea and then pull this off along the length of this straighter side to remove the stem and string.
