(A)Tomato Sauce

Directions

  1. Prepare the tomato sauce. Saute the garlic and onions, add and mix in the whole tomatoes. Then boil for 8-10 minutes and mix in the soy sauce.
  2. Cut the cod into large bite-size pieces, and season with salt and pepper.
  3. Peel the potatoes, then slice them into 5 mm (1/4 in.) thick pieces and soak in water. Place into a lidded heat-safe container and microwave for 2-3 minutes until soft.
  4. Coat a oven-safe baking dish with some butter. In the following order, layer on (3), (2) and (1), sprinkle on soy sauce, and bake at 180°C (356°F) for 10 minutes.

Cooking Basics

Garlic - mincing

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.


Onions - finely chopped

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.


Potatoes - soaking in water

Once cut, the starch in potatoes causes them to turn brown due to the process of oxidation. To avoid this soak cut potatoes in cold water. By doing so you will also be able to remove any starch on the surface and prepare less-starchy dishes. Completely cover in cold water and soak for about 10 minutes. Changing the water halfway through is not necessary.
