Prepare the tomato sauce. Saute the garlic and onions, add and mix in the whole tomatoes. Then boil for 8-10 minutes and mix in the soy sauce.

Cut the cod into large bite-size pieces, and season with salt and pepper.

Peel the potatoes, then slice them into 5 mm (1/4 in.) thick pieces and soak in water. Place into a lidded heat-safe container and microwave for 2-3 minutes until soft.

Coat a oven-safe baking dish with some butter. In the following order, layer on (3), (2) and (1), sprinkle on soy sauce, and bake at 180°C (356°F) for 10 minutes.

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
