Remove the seeds and innards from winter melon, peel skin. Cut into 5 mm (1/4 in.) thick, but edible pieces. Boil, making sure they are still quite firm, remove and rinse in a strainer. Cut the wakame seaweed into edible size pieces.

Remove the pit from the pickled apricot and mash. Mix with the ponzu sauce, pour on (1), place in a bowl and dress with dried bonito flakes.
