Directions

  1. Remove the seeds and innards from the winter melon, then peel at an angle. Cut into 4 cm (1.5 in) cubes, boil in lightly salted water and drain.
  2. Cut the chicken into 3 cm (1.2 in) squares and evenly cover in starch.
  3. Chop the bell pepper into little pieces.
  4. Heat (1) and (A) in a pot. Once boiling, add in (2) and leave to simmer for 10 minutes. Add in (3) and simmer for an additional 5 minutes. Serve in a bowl and lightly season with pepper.

Cut the bell pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.
