Prepare the onion-miso sauce from (A) by first sauteing the negi in 1 tsp of vegetable oil. Once softened, remove, add to the other ingredients and combine well. Place the mixture over medium to low heat, mixing from the bottom upwards until the sauce is thick and creamy.

Pat the yellowtail dry. Heat a small amount of vegetable oil in a fry pan and saute both sides. Use paper towel to absorb excess oil, then arrange onto plates with a side of the onion-miso sauce.

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.
