Soak the yellowtail in (A) for some time. Remove and pat the fish dry, then cook both sides to golden in 1 Tbsp of vegetable oil.

Break apart the maitake mushrooms and cut the onion stalk up into 4 cm (1.6 in.) lengths.

Heat 1/2 Tbsp of vegetable oil and saute (2). Pour in (B) and once simmering place the yellowtail inside. Cover the ingredients with the cooking liquid, allowing the flavor to soak in, then add in the freshly squeezed ginger root juice in using a circular motion.
