Directions

  1. Vertically slice the octopus into 5 mm (1/4 in) pieces.
  2. Cut the new potatoes into 3-4 cm (1.5 in) long sticks, then soak in water.
  3. Remove the seeds from the red chili pepper and cut into little pieces.
  4. Add some cooking oil to a fry pan and fry (3), careful not to burn.
  5. Remove and dry (2) and turn the heat to high. Fry the potato sticks for about 2 min.
  6. Add in the octopus and continue to stir fry.
  7. Pour on the sake and soy sauce. Sprinkle on the ground black pepper, turn off the heat and serve.

Potatoes - soaking in water

Once cut, the starch in potatoes causes them to turn brown due to the process of oxidation. To avoid this soak cut potatoes in cold water. By doing so you will also be able to remove any starch on the surface and prepare less-starchy dishes. Completely cover in cold water and soak for about 10 minutes. Changing the water halfway through is not necessary.
