300 g (2/3 lb.)

(A) Octopus seasoning

(B) Dipping sauce

Directions

  1. Cut octopus into 7 mm (1/4 in.), diagonal slices. Mince cilantro and slice tomatoes.
  2. Mix (A) together and soak octopus.
  3. Divide two eggs into whites and yolks. Mix yolks with cooking sake, flour, potato starch and remaining 1/2 egg a bit at a time, then add in cilantro. Beat whites until peaks form. Fold yolk mixture into whites 1/3 at a time, being careful not to create any bubbles, to make batter.
  4. Mix (B) together to make sauce.
  5. Lightly coat octopus in extra flour then cover in batter. Fry in oil at medium heat.
  6. Spread the tomato out across the plate, place (5) on top, garnish with a sprig of cilantro and serve with a side of the dipping sauce.

Crack the shell so that it is evenly divided into 2 halves. Over a bowl to catch the egg white, pass the egg yolk back and forth between the two egg shell halves. The trick to this method is splitting the egg shell in as perfect halves as possible at the start.
