Boil the vermicelli noodles and cut into easy to eat lengths.

Cut the pork into bite-size pieces and season with salt and pepper. Slice each pepper into thin strips.

Remove hard roots from bean sprouts. Cut the garlic chives into 4 cm (1.5 in) lengths.

Fry the chopped ginger and garlic in cooking oil in a wok. Once an aroma emanates, add in the pork. Once the color changes, add in the bell peppers, bean sprouts and noodles. Stir-fry well.

Add in (A), 1 cup of water and the garlic chives. Once the broth has disappeared, season with salt and pepper. Serve in a large bowl and sprinkle on peanuts.

Garlic - mincing
Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
Ginger - mincing
Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
