Directions

  1. Slice the pork into 1 cm (1/2 in) thick pieces. Season in (A).
  2. Cut the takenoko mushrooms and carrot into small pieces, boil and strain. Remove the stem from the shiitake mushrooms and cut into 3. Remove the seeds from the bell pepper and cut into large, bite size pieces.
  3. Mix (B).
  4. Fry (1) and remove and set aside. Fry (2) in the same pan. Add in the pork, followed by (3) and stir fry all together well.

Chicken thigh meat - removing excess fat

Use a knife to cut away yellow fat and excess skin.

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.
