Directions
- Slice each salmon fillet into half diagonally, then season with salt and pepper.
- Pat excess moisture off of (1), then lightly cover with flour.
- Spread the oil in the bottom of a fry pan, cook both sides of (2) over medium-high heat until browned, then turn down the heat to medium to cook through. Add in (A) and coat the fillets.
- Arrange on plates and garnish with the cherry tomatoes and lettuce.
