Rinse off and dry the salmon fillets. Sprinkle on salt and pepper and set aside for 5 minutes. Pat dry once again, then cover in flour and shake off the excess.

Heat up the vegetable oil in a fry pan, add in and melt the butter, place (1) into the fry pan skin-side down and cook over medium to low heat. Once browned, turn over and cook the other side then remove onto a plate.

Clean the fry pan and pour in (A). After the mixture comes to a boil, pour onto (2). Garnish with the leaf lettuce and cherry tomatoes.
