Directions

  1. Carefully mix the oysters in starch. Place in a strainer and wash well by hand, then drain and dry.
  2. Cut the komatsuna into long chunks.
  3. Heat (A) in a pot.
  4. Once boiling, add in the komatsuna and simmer for 1 minute.
  5. Add in (1) and cook through to the center. Serve all in a bowl.

Oysters - cleaning

Place the oysters into a strainer, then place into 3% salt water and lightly stir with your hands. Clean by shaking the bowl back and forth. By doing so not only sand, but any sliminess and strong odor will also be removed. After cleaning, use paper towels to thoroughly remove any remaining moisture.
