Directions

  1. Place pork inside a sealable small container. Add in seasonings and let sit refrigerated for at least 2 hours to marinate. Additional herbs can be added according to taste.
  2. Heat olive oil in a fry pan, then place pork loin into pan and cover, allowing meat to cook for 7 to 8 minutes on each side.
  3. Remove from pan and slice into medallions. Finely chop rosemary, thyme, parsley, and other herbs as desired and garnish before serving.
