Directions

Wash the rice and drain. Then cook in a rice cooker or on a stovetop.

Cut the chicken into 1 cm (0.5 in.) cubes, then season with salt and pepper.

Thinly slice up the onion.

Remove the hard base from the eringi mushrooms, and cut in half lengthwise, then slice into 5 mm (0.2 in.) thick pieces.

Melt the butter in a fry pan and saute (2). When the color changes, add in (3) and (4) and continue to cook.

Add in the flour and cook further. Mix in the milk, and once thickened, adjust the flavor with pepper and soy sauce.

Coat a gratin dish lightly with butter (not included in ingredients), and place the steamed rice in the dish.

Cover with the shredded cheese and pour on (5). Cut the cherry tomatoes in half, then arrange on top. Sprinkle with powdered cheese.

Bake in a toaster oven for 7-8 minutes, or remove when lightly browned.
Cooking Basics

The base of king oyster mushrooms is somewhat hard and tough, so please use a knife to shave this portion off.

Rinse off any rice bran from the surface of the rice and any rice starch that attached during polishing. As it causes oxidation and sliminess, and is readily absorbed by the rice, quickly pour out the first batch of water used to rinse the rice that is cloudy from the rice bran content. This process is made easier by using an all-purpose strainer and a bowl.

Rinse the rice by stirring with your hand and then discard of this water. Repeat this step 2 to 3 times until the water becomes less cloudy. Be careful not to rinse too vigorously, as doing so will damage the rice grains.

Leave the rice in the colander for about 30 minutes to absorb water.
4.

Place the rice into the inner pot of a rice cooker, add the indicated amount of water, and then steam.
