Roasted almonds offer a new spin on the popular boiled green beans in sesame dressing, while sliced onion adds crisp contrast for a nutty and refreshing appetizer.

green beans

120 g (4.2 oz.)

onion

1/2 bulb

sliced almonds

5 Tbsp

mirin

1 Tbsp

Directions

  1. Trim both ends of the green beans, slice into 3 equal lengths, then boil. Thinly slice the onion.
  2. Dry roast the sliced almonds, grind a 4 Tbsp portion in a mortar with a pestle until smooth, then add in the soy sauce and mirin.
  3. Add the green beans and the onion to (2), and combine well. Coarsely chop the remaining almonds and sprinkle on top.

Green beans - removing stems

Rather that removing one stem at a time, it is much faster to lay the beans with stems facing in the same direction and then cut these off at once.

Onions - thinly sliced

Cut the onion with its outer skin removed vertically in two. Then insert the knife in a V-shape to remove the stems, and thinly slice cut-side down vertically along the grain from end to end. This cutting method is often used for sautéing or boiling.
