
A healthy vegetable side dish made by tossing boiled green beans in a fragrant, sweet-savory sesame dressing. Enjoy the aroma of sesame, the vibrant color, and the crisp texture of green beans.

1Make the sesame dressing. Place the sesame seeds of (A) in a fry pan and toast over low-medium heat for about 2 minutes, stirring constantly until fragrant. Transfer to a mortar (“suribachi”) and grind coarsely. Add the water, sugar, and Kikkoman Soy Sauce to the ground sesame and mix well.

Bring water to a boil in a pot and add the green beans. Boil for 1.5 - 2 minutes. Immediately place in cold water to cool, then drain in a colander. Next, trim the green beans’ stemmed ends, and cut the beans into thirds.

Pat the green beans dry, add them to the ingredients from Step 1 and mix together well.
Cooking Basics

After boiling, transfer the green beans to an all-purpose strainer or colander to cool. This process is called "okaage" in Japanese. Placing the green beans in water to cool will cause them to become soggy. This method is recommended for snow peas, broccoli and green asparagus as well.
