Quickly boil the yam noodles in boiling water, and cut into easy-to-eat lengths.

Thinly slice the carrot, then boil and thinly slice the green beans.

Place (A), (1) and the carrots into a pot, and simmer over medium heat for 2 to 3 minutes.γTo finish, add in the green beans, allow to come to a simmer and then turn off the heat.

Carrots - matchstick juliennes
Cut a peeled carrot into 4 to 5 cm (about 2 in.) pieces lengthwise, and slice each piece into 3 mm (0.1 in.) wide planks, gradually sliding and stacking the slices. Lastly julienne these into 3 mm (0.1 in.) width thin sticks.
Green beans - draining
After boiling, transfer the green beans to an all-purpose strainer or colander to cool. This process is called "okaage" in Japanese. Placing the green beans in water to cool will cause them to become soggy. This method is recommended for snow peas, broccoli and green asparagus as well.
