Chop up the chocolate and melt in a bowl over a hot water bath.

Separate the egg into yolk and white.

Add 1 Tbsp of sugar and the original soymilk to the yolk (2), place over a hot water bath and whip until thick and firm. Add the soy sauce and (1), mix to blend in the chocolate, set aside to cool.

Add 1 Tbsp of sugar to the egg whites, whip until firm peaks form.

Add 1/2 of (4) to (3) and combine. Add the remainder and completely combine together, transfer to a lidded container and cool for about 3 hours in a refrigerator before serving in dessert dishes.

Crack the shell so that it is evenly divided into 2 halves. Over a bowl to catch the egg white, pass the egg yolk back and forth between the two egg shell halves. The trick to this method is splitting the egg shell in as perfect halves as possible at the start.
