Soymilk Chocolate Mousse

100 g (3.5 oz.)


100 ml (3.7 fl. oz.)

  1. Crush up the chocolate and melt it in a bowl over a hot water bath.
  2. Separate the egg into yolk and white.
  3. Add 1 Tbsp of sugar and the original soymilk to the yolk from (2), place over a hot water bath and whip until thick and firm. Add the soy sauce and (1), mix to blend in the chocolate, set aside to cool.
  4. Add 1 Tbsp of sugar to the egg whites, whip until firm peaks form.
  5. Add 1/2 of (4) to (3) and combine. Add the remainder and completely combine together, transfer to a lidded container and cool for about 3 hours in a refrigerator.
