Remove tendons from the chicken tenders, cut up diagonally into bite-size pieces and slice a shallow grid-style pattern into each surface. Trim-off the stems and de-string the snow peas, quickly boil with salt (extra) and julienne into fine strips.

Place (A) in a pot, pat the potato starch onto the chicken pieces then add these in. Once the chicken is cooked through (about 2 minutes) add in the soy sauce and salt, then the snow peas and turn of the heat. Serve into bowls and garnish with yuzu peel if available.

Chicken tenders contain a sinew. Lay the tender down flat and rock a knife back and forth along the sinew to remove. Nowadays sinew-removed chicken tenders are widely available.
Snow peas - removing stems and strings
Fold the stem over towards the straighter side of the snow pea and then pull this off along the length of this straighter side to remove the stem and string.
