Separate the broccoli into florets, cut large florets in half to match with smaller-sized florets. Cut the stem into half its length, thickly peel around the woody base and adjust the shape and size of the upper stem. Then slice the stem into 5 mm (0.2 in.) thick rectangular squares. Mince the anchovies and garlic.

Heat the olive oil in a fry pan on high, lighly stir-fry the garlic and anchovies. Add in the broccoli and stir-fry for about 2 minutes until bright green.

Sprinkle on the sake and stir-fry for 1 minute longer. Sprinkle on (A), stir-fry all together, then turn off the heat.

Garlic - mincing
Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
