(A)Marinade

200 ml (6.8 fl. oz.)

  • To prepare soft-boiled eggs, return the eggs to room temperature beforehand and use vinegar and salt when boiling.

Directions

  1. Boil the eggs to your preferred hardness. For soft-boiling, place the room temperature eggs into a 16 to 18 cm (6.5 to 7 in.) diameter pot and add in enough water to cover completely. Add in 1/2 Tbsp of vinegar and a small amount of salt and then place over medium heat. Once the water is boiling, use long chopsticks (saibashi) to turn the eggs over (doing this will keep the yellow yolk in the center). Once boiling, turn the heat to low, boil for 4 minutes and then place into ice water.
  2. Place the marinade ingredients into a clean airtight container, add in the boiled eggs (1) and marinate for more than 2 hours.
