Cut the lemon slices (A) in half and combine with the honey.

Place (B) into a pot over medium heat, once boiling turn the heat to low and allow to simmer for about 2 minutes while stirring occasionally.

Add the soymilk, yogurt and mirin to (2), bring to a quick simmer then allow to cool.

Once cooled, pour into dishes, chill and harden in a refrigerator and then top with (1) before serving.
