Directions

  1. Quickly boil the scallops in salted (extra) water to cook only the surface, remove into ice water, then thinly slice into rounds.
  2. Slice the white turnip into thin rounds, sprinkle on and massage in the salt. Once softened, squeeze out excess moisture.
  3. Peel the tomatoes, dice into 5 mm (0.2 in.) cubes, then mix with the onions and (A).
  4. Arrange (1) and (2) on a plate, top with (3), and garnish with parsley sprig tips.
