Ingredients(Servings: 3)

flounder

3 fillets

ginger

1 knob

(A)

mirin

3 Tbsp

sugar

1 Tbsp

water

200 ml / 6.8 fl. oz.

Directions

  1. 1

Scale the flounder, then make shallow cuts into the skin surface. Pour boiling water over the fish to blanch it lightly. Thinly slice 2 to 3 pieces of ginger, and julienne the remaining ginger into thin matchstick strips.

  2. 2

Place (A) and the thinly sliced ginger into a fry pan (approximately 26 cm / 10.2 in. diameter) and bring to a boil. Add the flounder, cover with a drop lid*, and simmer over medium heat for about 15 minutes until the cooking liquid is reduced to about one-third.

    • A drop lid is a lid that floats on top of the liquid in pots and pans while simmering foods. It allows heat to be evenly distributed so ingredients cook evenly and quickly. You can purchase one, or make a substitute out of aluminum foil.
  3. 3

Arrange the flounder in serving dishes, pour the cooking liquid over each fillet, and top with the julienned ginger.
