(A)Eringi seasoning

to taste

(B)Zucchini seasoning

Directions

  1. Remove all hard parts of the king oyster mushroom stem, then coarsely chop up.
  2. Crack the eggs and add salt and pepper.
  3. Cook the king oyster mushroom in 1 Tbsp of olive oil, season with (A) and remove.
  4. Shake the fry pan back and forth, then add another Tbsp of oil. Add in the eggs and cook until edges have hardened slightly, then add in the king oyster mushroom and cook until the eggs are firm. Transfer to plates.
  5. Cut the zucchini into thick rounds, then add a final Tbsp of oil to the fry pan and saute. Season with (B) and serve with the omelet. Decorate with ketchup if desired.
