Directions

  1. Prepare the panko. (If using fresh bread crumbs, place aside in a strainer and allow to dry out. Use a food processor or grinding bowl to turn the panko into fine crumbs.)
  2. Peel the zucchini lengthwise into a striped pattern and cut into 1 cm (0.4 in.) thick rounds.
  3. Coat (2) in order with flour, beaten egg, then panko, and pan-fry to golden in the preheated olive oil over medium heat. Serve the fritters fresh, sprinkled with soy sauce, salt and pepper, and a side of lemon wedges.
