Directions

  1. Prepare the panko bread crumbs.
    (If using fresh bread crumbs, place aside in a strainer and allow to dry)
    Use a food processor or grinding bowl to turn the panko into fine crumbs.
  2. Peel the zucchini while leaving bands of skin, and cut into 1 cm (1/2 in.) thick rounds.
  3. Coat the zucchini (2) with flour, beaten egg, then panko, and brown in a pan with olive oil preheated over medium heat.
    Serve the freshly made fritters on plates sprinkled with optional soy sauce, salt and black pepper garnished with lemon.
