Wet tofu with hot water,cut into 2-3 cm (1 in.) cubes.

Cut the goya in half vertically, remove the skin and inner seeds. Thinly slice at an angle into little pieces.

Fry (1) and (2) in a fry pan with cooking oil, sprinkle on salt and add a half cup of water. Cover and boil for 2 mins., then remove and drain in a strainer.

Fry ginger in the same pan with 1/2 tbsp of salad oil. When you can smell the ginger, add the pork and cook until it begins to fall apart.

Add in (A),(B),(3) and stir fry. Thicken with potato starch that has been dissolved with water.

Bitter melon - removing seeds and cotton
Cut the bitter melon in half lengthwise and then scrape out the seeds and cotton with a spoon.
Ginger - mincing
Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
