Slice the pork into edible pieces and season with (A). Remove the stems from the shishito peppers. Parboil the string beans, then cut in half. Divide the bitter melon in half vertically, remove the seeds and cut at an angle. Mince the ginger.

Heat up the salad oil in a frying pan, then fry the ginger and pork. When the pork's color begins to change, add the bitter melon, then the green peppers, and finally the string beans and fry well.

Mix and add (B), and stir in well.

Bitter melon - removing seeds and cotton

Cut the bitter melon in half lengthwise and then scrape out the seeds and cotton with a spoon.
Ginger - mincing




Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
