Place the alfonsino onto a flat dish, then pour boiling water onto both sides to remove any smell and sliminess.

Bring (A) to a boil in a fry pan, place (1) skin-side up inside.

Once the cooking liquids are boiling again, pour these over the alfonsino, make a drop lid out of aluminum foil, turn the heat to high-medium and simmer. Use a circular motion to cover the fish with the cooking liquids several times while simmering. Simmer for 5 to 6 minutes, until the cooking liquids are reduced to 1/3.
- A drop lid is a lid that floats on top of the liquid in pans while simmering foods. It allows heat to be evenly distributed so ingredients cook evenly and quickly. You can purchase one, or make a substitute out of aluminum foil.

Cut the hard roots from the enoki mushrooms and daikon radish sprouts.

Place (4) next to the alfonsino (3), bring the ingredients to a quick simmer and then serve together.

Enoki mushrooms - removing the hard base
Taking out from the package before removing the hard base will result in the hard base falling apart all over the place. Cutting off the hard base while its still in the package is less messy and recommended. After doing so, take the part for use out of the remaining package. Some packages available on the market have a cutting line conveniently indicated on the package.
