Directions
- Boiling the mizuna until still slightly firm, cut into 5 cm (2 in.) lengths. Break apart the cauliflower, boil in water with some vinegar. Divide the juice and the scallop shells, shred the bodies. Set aside the soup.
- Pour the scallop juice, (A), and 2 cups of water in a pot and heat. Once boiling, add in the cauliflower and mizuna and simmer for 2-3 minutes.
- Directly before removing from the heat, add in the broken scallop pieces, simmer for a very short time. Serve in a bowl.
