Directions

  1. Boiling the mizuna until still slightly firm, cut into 5 cm (2 in.) lengths. Break apart the cauliflower, boil in water with some vinegar. Divide the juice and the scallop shells, shred the bodies. Set aside the soup.
  2. Pour the scallop juice, (A), and 2 cups of water in a pot and heat. Once boiling, add in the cauliflower and mizuna and simmer for 2-3 minutes.
  3. Directly before removing from the heat, add in the broken scallop pieces, simmer for a very short time. Serve in a bowl.
