Cut the mustard spinach into 4 cm (1.6 in) lengths, place into a lidded heat-safe container and microwave (600 W) for 2 minutes.

Julienne the carrots into 4 cm (1.6 in) long pieces, place into a lidded heat-safe container and microwave (600 W) for 30 seconds.

Cut the bacon into 1 cm (0.4 in.) widths, place into a lidded heat-safe container and microwave (600 W) for 1 minute.

Mix together (A) to prepare the dressing and dress a combined (1), (2) and (3) prior to serving.

Carrots - matchstick juliennes
Cut a peeled carrot into 4 to 5 cm (about 2 in.) pieces lengthwise, and slice each piece into 3 mm (0.1 in.) wide planks, gradually sliding and stacking the slices. Lastly julienne these into 3 mm (0.1 in.) width thin sticks.
