Cut the cucumber in half lengthwise. Then at an angle into 5-6 cm (2) thick pieces. Remove the sinew from the celery and slice diagonally. Season the celery and cucumber with salt, then rinse, and dry.

Remove the seeds from the red peppers. Thinly slice the ginger.

Mix together (A) forming the sweet vinegar sauce.

Pour sesame seed oil in a pot, stir fry the red chili peppers and ginger. Once an aroma emanates, add and quickly fry the celery over high heat. Pour in the sweet vinegar sauce (3), and stir everything together well. Arrange on a plate, garnish with celery leaves if available.
Cooking Basics

Strings in celery stalks are tough. Use a knife to pull the strings off starting from the lower half of the stalk. When slicing up thinly or diagonally, you do not need to remove these in advance as you will be cutting through the strings anyway.

Cut the bell pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.
