Directions

  1. Cut the chicken into large, bite-size pieces.
  2. Peel the potatoes, cut into large, bite-size pieces, soak in water, remove and dry.
  3. Break apart the broccoli.
  4. Heat the sesame oil and garlic in a pot. Once fragrant, lightly saute (1) and (2). Submerge the ingredients in an adequate amount of water and add in (A). Allow to simmer for 10 minutes.
  5. Add in the broccoli and simmer for 1 minute. Pour in (B), cook for a moment longer and then serve.

Potatoes - soaking in water

Once cut, the starch in potatoes causes them to turn brown due to the process of oxidation. To avoid this soak cut potatoes in cold water. By doing so you will also be able to remove any starch on the surface and prepare less-starchy dishes. Completely cover in cold water and soak for about 10 minutes. Changing the water halfway through is not necessary.

Garlic - crushing

Peel the thin skin, then cut into half vertically. Place the cut side down to prevent the garlic from moving around during cutting. Place a flat object on top and press down to crush. The flatside of a knifeblade can also be used, however a wooden spatula is safer as it is less likely to slip during crushing.
