  1. Peel the potato, chop into little pieces, boil in lightly salted water, remove and mash.
  2. Boil the fava beans in lightly salted water, remove and peel.
  3. Cut the cheese into 1 cm (1/2 in) cubes.
  4. Heat cooking oil in a pan and fry the onions. Season with (A).
  5. Mix together (1),(2),(3) and (4). Form into small ovals.
  6. In the following order, dip each in the flour, egg and bread crumbs and fry in cooking oil.

Split the pod open at the seam and remove the beans inside.

Broad beans - making a slit

If removal of the thin skin is not required, such as when lightly boiling in salt water to prepare, cut a slit into the middle line. Doing so will allow for faster cooking and also make the thin skin easier to peel away prior to eating.
