Directions

  1. Cut the pork cutlets into 1 cm (1/2 in) thick pieces. Season in (A).
  2. Dip each cutlet in (B) and fry until golden brown in cooking oil at 170 C (138 F).
  3. Finely chop the cabbage. Cut the tomato into wedges.
  4. Pile (2) and (3) on a plate. Garnish with tonkatsu sauce.

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
