Cut the eel into 1 cm (1/2 in) widths. Slice the green perilla into thin strips.

Add the rice to a large bowl. Arrange the eel on top and pour on the eel sauce.

Lightly mix together, then move an edible amount to a rice bowl. Sprinkle on sansho pepper to your liking. For the first serving enjoy just as is.

For the second helping, garnish with seaweed, green perilla and wasabi.

For the third helping, mix and rewarm and pour on (A).
