1 fillet (120 g/ 4.3 oz)

6 Tbsp (90 ml / 3 fl. oz.)

Directions

  1. Slice the eel in half lengthwise and then into 2 to 3 cm (0.8 to 1.2 in.) width pieces. (For eel covered in sauce, quickly rinse off and pat dry before use).
  2. Place (A) and (1) into a fry pan and turn on the heat. Once boiling, simmer over medium heat for about 1 minute.
  3. Pour the beaten eggs into (2), and cook to your preffered hardness and texture.
  4. Place the warm rice into bowls, place (3) on top and garnish with Japanese parsley if desired.

Eggs - removing the chalaza

The chalaza serves the role of holding an egg yolk in place. It is edible, but if you prefer, pick it up with cooking chopsticks (or a fork) to remove.
