Directions

  1. Remove the seeds and insides from the kabocha squash and cut into large, edible size pieces. Remove random strips of skin from each piece and soak in water.
  2. Cut the pork into edible size slices.
  3. Heat (1) and 1 cup of water in a pot. Once boiling, add in (2) and simmer over medium heat while occasionally scooping away the scum that forms on the surface.
  4. Once it begins to boil again, add in (A), cover and simmer until the broth has all but disappeared. Serve in a bowl or dish.
