Directions

  1. Slice the bonito into 7-8 mm (0.3 in) pieces. Marinate in (A) for 15-30 minutes.
  2. Thinly slice the onion. Soak in water for a few minutes, remove and dry.
  3. Fry the slices of garlic until crispy in cooking oil.
  4. Fill the bowls steamed rice, place the bonito on top, followed by the onions. Pour on (A), and finally sprinkle on the fried garlic.

Onions - soaking in cold water to soften the flavor

When preparing raw onions, soak in cold water before hand to remove some of the pungency and soften the flavor. However since soaking too long will dilute the flavor, soaking in cold water for 5 to 10 minutes is recommended. Squeeze out excess water before using.

Garlic - thinly sliced

Cut the garlic clove with the skin removed vertically in two. Then use the heel of the knife to remove the core and thinly slice.
