Lightly season the bonito with salt and black pepper, then slice the bonito into smaller pieces that can be easily eaten in a single bite.

Layer the green perilla together and then finely chop the leaves.

Pour sesame oil into frying pan and then add heat. Add bonito slices and ginger root to the pan. Afterwards, evenly distribute soy sauce in the pan.

Add the green perilla. Then rotate the bonito slices to ensure outer sides are cooked, while leaving the center somewhat rare. Once all sides are cooked similar to the picture, turn off heat and remove the bonito from the pan.
