Trim fat off the chicken, and season with (A). Remove excess moisture, and sprinkle on the black pepper.

Pan-fry both sides of (1) in olive oil until crispy and golden.

Place into a cooking tray, and coat with the honey. Mix together the dried herbs, then sprinkle on top. Bake in an oven preheated to 200 C (390 F) for 5 minutes.

Slice up and serve on plates garnished with fresh rosemary, if desired.
