Fluffy brown rice perfects this dish flavored with Japanese seasonings

Directions
- Quickly rinse the brown rice in a strainer, then set aside for about 15 minutes.
- Thinly and diagonally slice up the chicken.
- Separate the broccoli into florets, remove the hard portion of the core and cut into bite-size pieces. Sprinkle on the salt and sake, lightly cover with plastic wrap (or place in a heat safe container with an unsealed lid) and heat for just over 2 minutes in a microwave (500W).
- Melt the butter in a fry pan, quickly cook (2), add in (1), quickly cook, then pour in the bonito broth.
- Simmer for about 15 minutes while stirring and removing any scum that forms on the surface. Steam-fry for 5 minutes, then stir in the soy sauce.
- Arrange (3) in a heat-safe dish, pour in (5), sprinkle on powdered cheese and then bake in a toaster oven until golden brown on the surface.
Cooking Basics
This method is convenient for preparing small amounts of dashi, such as soup for one person, ohitashi (boiled vegetables seasoned with dashi and soy sauce), sesame dressing, etc. Place dried bonito flakes (about 5 g /0.2 oz.) into a tea strainer and pour in 200 ml (6.8 fl. oz.) of hot water.
When making simmered dishes, place about 15 g (0.5 oz.) of dried bonito flakes into a tea bag for 1000 ml (33.8 fl. oz.) of water, and add the tea bag in with all other ingredients to prepare deeply-flavored and savory simmered dishes.
Lay the knife down almost flat to make thin slices. By doing so, larger slices will cook faster and flavors will be soaked up more easily.
In comparison to white rice, more water is used to cook brown rice. The amount of water required will depend on the cooking equipment used, such as a rice cooker, donabe (earthenware) pot or pressure cooker.
To wash and rinse, gently rub the rice grains together with your hands, and change the water a total of three times. Also, soak the rice for up to 6 hours prior to cooking, and once cooked leave the lid on to steam a further 10 minutes.
