fresh salmon

2 fillets (200 g / 7 oz.)

zucchini

1/2 (100 g / 3.5 oz.)

Japanese eggplants

1 (70 g / 2.4 oz.)

2 Tbsp

vegetable oil

1 Tbsp

(A)

salt

a dash

(B)

1 & 1/2 Tbsp

sake (cooking sake)

1& 1/2 Tbsp

mirin

1& 1/2 Tbsp

vinegar

1/2 Tbsp

sugar

2 tsp

Directions

  1. Divide the salmon fillets into 4 equal-sized portions, sprinkle with (A) and let marinate for about 5 minutes. Cut the zucchini and eggplant into 1 cm (0.4 in.) thick rounds.
  2. Coat the salmon, zucchini and eggplant with the flour.
  3. Heat the oil in a fry pan over medium heat, place the salmon skin-side facing down, arrange the zucchini and eggplant alongside and pan-fry the ingredients. When golden on one side, flip over.
  4. Once golden on both sides and cooked through, add the mixed seasonings (B) and simmer briefly, coating the ingredients evenly. Serve into dishes and sprinkle on the roasted sesame seeds.
