(A) Tomato Sauce

Directions

  1. Mix together (A) to prepare the tomato sauce and set aside for about 5 minutes.
  2. Sprinkle the marlin fillets with salt and set aside for about 5 minutes. Pat dry, sprinkle on the black pepper and lightly cover in flour.
  3. Place the olive oil into a fry pan, turn the heat to medium and cook (2) for about 2 minutes. Flip over and cook for a further 2 minutes to cook through.
  4. Arrange (3) onto a plate, pour on (1) and garnish with the baby leaf lettuce and torn up lettuce leaves.

Cooking Basics

Onions - finely chopped

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
