- Remove the stems from the shiitake mushrooms, and then cut each piece into four. Cut the bases off the shimeji and enoki mushrooms. Then chop the onion into 1 cm pieces.
- Add butter and vegetable oil to the frying pan and add heat. Put mushrooms and onions into the pan, along with salt and pepper. Sprinkle vinegar throughout the pan, then add cooked rice and stir fry ingredients together.
- Season the fried rice with soy sauce while in the pan, then plate the fried rice into a dish or plate. Garnish the rice with green onions as desired.
