Chinese-Style Simmered Tofu and Bok Choy

1/2 block (about 150 g (5 oz.))

70 g (2.5 oz.)

Directions

  1. Separate the bok choy leaves from the stalks. Cut the stalks into 4-6 pieces and chop the leaves into bite-size pieces. Cut the tofu into eighths. Cut the bamboo shoot into thin slices.
  2. Heat the vegetable oil over medium heat, then fry the ginger, being careful not to burn. Add the bok choy stalks and bamboo shoots. When they have become slightly tender, add in the bok choy leaves and (A), then mix together.
  3. Mix in the tofu, then adjust the flavor with salt and pepper. Thicken with the starch dissolved in water, then add the sesame oil. Remove from heat and serve.

Ginger - mincing

Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
