Cut the bamboo shoot in half lengthwise. Slightly shave in order to flatten the exterior roundness (aim to make it 1 cm (1/2 in.) thick). Boil and season with (A).

Boil the shavings from (1) and then chop finely.

Finely chop the ham and onion. Add (2), the flour and 1/2 of the egg yolk and mix together.

Place (1) in a bowl. Sprinkle on a little flour. Pour (3) on top.

Cook at 180 °C (356 °F) in an oven for 5 minutes. Pour on the remaining egg and cook at 160 °C (320 °F) for 10 minutes. Serve in a bowl and garnish with Japanese pepper seedling leaves.

Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.
