Directions

  1. Drain and dry the tofu well. Cut in half vertically into 1.5 cm (1/2 in) pieces.
  2. Break apart the tuna with a fork.
  3. Beat the egg.
  4. Cut the garlic chives into 4 cm (1.5 in) lengths.
  5. Heat 1 tbsp of sesame seed oil in a pan. Fry both sides of (1) until golden brown, then remove and set aside.
  6. Pour in and spread around an additional 1.5 tbsp of sesame oil. Next, add in and stir fry the bean sprouts and garlic chives and push to one side of the pan. Pour in the egg yolk in the open space and scramble.
  7. While the egg is still loose, return the tofu pieces and mix together until eggs are well done.
  8. Add in half of the bonito flakes and lightly stir.
  9. Serve on a dish and decorate with the green spring onions, the remaining bonito flakes and black pepper.
