Directions

  1. Peel the sweet potatoes, cut into 5-6 cm (2 in) lengths, then lengthwise into 6 equal sized pieces. Soak in water for 5 minutes. Cut the lemon into a radial shape.
  2. Heat cooking oil in a pan over medium heat and fry the chicken. Wipe the sweet potato dry and stir fry.
  3. Pour in 1 cup of water. Once boiling, in the following order add in sugar, sake, mirin, soy sauce and lemon juice.
  4. Cover the pot in aluminum foil. Once 1/3 of the broth is remaining remove the foil. Continue to boil while occasionally shaking back and forth until the broth has all but disappeared. Serve immediately.

Sweet potatoes - removing starch

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
